Dinnete
The Swabian speciality from the wood-fired oven.
If you want to upset a Swabian or a Badener, then say pizza to what he pulls out
of the wood-burning oven hot and steaming, crispy and fragrant with the long
bread shovel. In Swabia it's a „dinnete“, in Baden it's a „dinnele“ - but over
here as over there it's an old cultural asset!
When the villages and hamlets still had bread baking day once a week, the
large wood-burning ovens were heated up and then, when the stone baking
chamber was at its hottest, just before the loaves of bread went in, dinnete was
baked: topped flatbreads made of farmer's bread dough with a little caraway
seed. And the difference to pizza? That's easy to explain: dinnete simply tastes
completely different. The dough is thicker, the topping not Mediterranean with
tomatoes. In the original, it was topped with what was available on the farm:
Onions, smoked meat, sour cream, fresh herbs or even apples and cream as a
sweet variant. But globalisation does not stop at dinnete. Dinnete with tomato
and cheese? Well - as long as you call it dinnete.
